Ingredients

  • 2 Cup All-Purpose Flour
  • 1/2 Tsp Salt
  • 3 Tsp Baking Powder
  • 3 Tbsp Unsalted Butter
  • 3/4 Cup Water
  • 1/2 Cup Cooking Oil

Prep Time: 45min Yield: 10-12

 

Jamaican Fry Dumpling

 

Method

  1. Combine flour, salt, baking powder into a bowl.
  2. Blend butter into the flour with hands or mixer to arrive at a crumbly texture.
  3. Gradually add water to the mixture as you knead or mix the dough. You may not need all the water if the dough is too wet be sure to sprinkle flour until it reaches the desired consistency.
  4. Do not over mix or knead. The dough should have a smooth consistency.
  5. Place in a bowl and cover with plastic wrap for 15 mins.
  6. Pour oil into the frying pan to heat just enough to cover the rolled dumplings halfway.
  7. Remove plastic wrap and roll dough into medium balls and add to the frying pan.
  8. After adding the dumplings reduce heat to medium and, fry both sides until golden brown and dumplings are light and fluffy.
  9. Place on Paper towel to drain excess oil and serve hot.

Jamaican Rice & Peas Recipe

Rice & Peas is a very popular dish here in Jamaica. Most residents cook this on Sundays and on Wednesdays with a preferred side of protein. Otherwise known as the Jamaican Coat of Arms.

Served with: Jamaican Stew Chicken Recipe, Jamaican Curry Chicken Recipe

Ingredients

  • 1 Cup Red Kidney Beans
  • 1 Cup Coconut milk (Grated or Blend Coconut for best results)
  • 1 Stalk Escallion
  • 1 Sprig Thyme
  • 1 Green Scotch Bonnet Pepper
  • 1 Clove of Garlic
  • 1 Tsp Salt
  • 1 Tbsp Unsalted Butter
  • 2lbs Rice
  • Water
  • Pimento

Prep Time: 35mins- 1hr  Yield:4-6

Jamaican Rice & Peas

Method

  1. Add 2 Cups of water into a cast iron pot, add peas, pimento garlic, and cover pot to boil over high heat.
  2. Boil until peas are 3\4 way cooked if not repeat the process of adding 2 more cups of water and cover pot until peas are 3/4 way cooked.
  3. After the peas are cooked you add crushed escallion, thyme, and scotch bonnet pepper to the boil until peas are fully cooked.
  4. The water should boil until it’s reduced to 1 cup of water.
  5. Add coconut milk, butter, and salt and boil for 10 mins.
  6. Wash your rice and pour into pot stir with a fork, make sure the water level is 1 finger joint above the rice in the pot.
  7. Cover pot and lower heat to low flame and allow to steam.
  8. If the water is reduced and the rice is not cooked through, sprinkle 1/2 cup water to the rice and cover with plastic wrap or foil and cover for another 10 mins.
  9. Remove from heat and serve hot with your side of Protein.

Jamaican Cornmeal Porridge has been a household name for the longest time and is enjoyed by Jamaicans at breakfast time. Make this recipe and enjoy its tastiness.

Ingredients

  • 1 Cup Refined Cornmeal
  • 3 Cup Water
  • 1/2 Cup Sweetened Condensed Milk
  • 1oz Sugar
  • 1/4 Tsp Nutmeg
  • 1/4 Tsp Cinnamon
  • 2 Drops Vanilla Extract

Prep Time: 15-20 mins  Yield:4

Jamaican Cornmeal Porridge Recipe

Method

  1. Add Cornmeal to a bowl and add enough water to cover the cornmeal.
  2. Use a fork to stir the cornmeal and the water so it moves freely in the bowl.
  3. Bring the 3 cups of water to boil then reduce heat to medium.
  4. Pour the cornmeal mixture into the pot of boiling water and stir with fork continuously for 5 mins.
  5. Stir in figure 8 to prevent cornmeal from forming lumps.
  6. Continue to stir but be careful as it should come to a boil and it will pop and burn. Be careful you can reduce heat as well as take the pot off and back on to reduce popping.
  7. Cover pot and allow porridge to cook for another 15 mins, stir occasionally.
  8. Turn the flame off and keep the pot on the hot burner.
  9. Add Vanilla extract, Nutmeg, Cinnamon, Sugar and Condensed Milk to Sweeten. Sweeten to Taste.
  10. Serve hot in bowls and sprinkle Cinnamon.

Serve with National Water Crackers or Hardough Bread.

Jamaican Stew Chicken Recipe

Brown Stew Chicken is another one of our tasty Jamaican dishes.  It is Normally eaten around dinner time and some restaurants have it on their breakfast menu served with  fried dumpling or boiled food.

Ingredients

  • 3lbs Chicken
  • 1 Stalk Escallion
  • 1 Clove of Garlic (Chopped)
  • 2 Cups of Water
  • 1 Tsp Salt
  • 3 Regular sized Carrots
  • 1oz Soya Sauce
  • 1 Sprig of Thyme
  • 2 Tbsp Vegetable Oil
  • 1 Medium Onion (Sliced)
  • Vinegar
  • 20z of Ketchup

Prep Time: 40mins  Yield: 4

Method

  1. Cut, and rinse chicken pieces with vinegar and water.
  2. Wash and cut up seasonings, add soya sauce and seasonings to cut up meat with the exception of oil and ketchup.
  3. Rub seasoning unto the chicken then marinate for at least 30 mins.
  4. Remove onions, garlic, and easily removed seasonings from the chicken and place them into a bowl.
  5. Heat the pot with vegetable oil, fry pieces of chicken on both sides and remove the chicken from the pot.
  6. Drain excess oil.
  7. Add chicken pieces back to the pot and add water, ketchup, and carrots along with the seasoning set aside in the bowl.
  8. Cover and cook until tender over medium heat.

Serve with your side of choosing.
